From the center to the memorial entrance it's about 2 km. Look at hotels and apartments around Sovetskaya, Lenina, Gogolya, and Chkalova streets. From there you can walk to the fortress at an unhurried pace in 25–30 minutes. If Belovezhskaya Pushcha is the only reason for your trip, then yes: from Kamenyuki to the park entrance is a few minutes on foot, and it's more convenient to plan excursions for the morning. But if you also plan to visit the Brest Fortress, walk along pedestrian Sovetskaya Street, and see the city museums, it's better to stay in Brest and set aside a day for the trip to the forest.
